Start with thigh
Breast is too lean and too fine-grained. It goes chalky when you work it and dry when you crisp it.
Thigh has enough fat and connective tissue to survive both stages, and it is cheaper. This is the decision that determines whether the rest works.
Add fat on purpose
Lamb brings its own. Chicken does not, so a proportion of extra fat — oil, or some skin worked in — goes into the mix before you emulsify it.
Without it the loaf holds together fine and then dries out the moment it hits the hot pan, which is the stage that makes it taste like a kebab.
The method is the same
Work it to a paste, press it into a tight loaf with no air pockets, chill it hard, cook it gently as a whole piece, cool it, slice it thin, then crisp the slices on a very hot surface.
Nothing about the sequence changes for chicken. Only the fat and the cooking time do — a leaner loaf cooks faster and overshooting it is unforgiving.
Flavour it before you work it
Garlic, warm spice, a little acid. Season before emulsifying so it distributes through the paste rather than sitting on the surface.
