What is actually knowable

The exact marinade is a trade secret and it is not going to appear on a blog. What is public is the family the dish belongs to: peri-peri, or piri-piri, is a Portuguese-African chilli preparation built on African bird's eye chilli.

So the useful target is not "the recipe". It is the flavour architecture, which is not secret at all.

The architecture

Chilli for heat, acid for the sharpness that defines it, garlic for depth, a herb note, oil to carry it, salt to bind the whole thing.

The acid is the part home versions consistently under-do. Peri-peri reads as bright and sharp rather than simply hot, and if yours tastes like generic chilli chicken the missing element is almost always more lemon or vinegar than felt comfortable.

Marinate like you mean it

A short marinade seasons the surface. A long one — hours, ideally overnight — gets into the meat and changes the texture as well as the flavour.

This is the single step that separates a convincing version from a disappointing one, and it costs nothing but planning. Spatchcock or joint the bird so the marinade reaches more surface and it cooks evenly.

Heat, then sauce

Cook it hot enough to char in places — grill, griddle or a very hot oven — because those scorched edges are a large part of the character.

Then add more sauce off the heat. Sauce applied during cooking burns its sugars and goes bitter rather than glazing.

If you have a bottle in the cupboard

Retail peri-peri sauces carry an ingredient list, in weight order. That is a far better guide to the architecture than any blog claiming to have the restaurant formula.
