How to copy a dish at home: the complete method

A repeatable way to reverse-engineer almost any dish — a supermarket meal, a takeaway, or a plate you were served. What the label tells you, what the photo tells you, and what you have to taste your way to.

What “copying a dish” actually means

You are not trying to clone a production line. A factory has a spray dryer, a retort, twelve minutes of steam injection and a shelf-life target of three weeks. You have a pan. Aiming at an identical result is the fastest way to be disappointed.

What you are actually copying is the experience: the balance of salt and fat, the particular acidity, the texture of the sauce, the way the aromatics hit first. Get those right and almost nobody — including you — will be able to tell the difference on the plate. Get them wrong and it will taste “nearly right, but off”, which is the most annoying outcome in cooking.

Three sorts of thing can be copied, in descending order of how much help you get:

  1. A packaged meal with an ingredient list. The best case. The label is a partial recipe that the manufacturer is legally required to print.
  2. A restaurant plate you photographed. No list, but a photo carries more information than people think — see the guide on copying from a photo alone.
  3. Something you ate once and remember. Hardest, and the most fun.

Start with the label, not with a recipe

The instinct is to search for a recipe with the same name. Don’t — not yet. The recipe you find is somebody else’s version of the dish, and you already have something better: the actual list of what went into the one you liked.

Under EU food law every packaged food must list its ingredients in descending order of weight, measured at the time of manufacture. That single rule does an enormous amount of work. It tells you which ingredient dominates, which are present in trace amounts, and roughly where the cut-off between “this is the dish” and “this is seasoning” falls.

You also get percentages in several places, because the law forces them whenever an ingredient is named or pictured on the front of the pack. If the box says “Chicken & Mushroom Pie”, both the chicken and the mushroom carry a figure. That is the single most useful number on the packet, and it is free.

Turn a list into proportions

Here is the arithmetic, and it is not difficult.

Take the net weight from the pack — say 400 g. Take the percentages you were given. Subtract them. Whatever is left is shared out among the remaining ingredients, in the order they are printed. You are not solving for exact grams; you are bracketing each one between the one above and the one below it.

A worked example. A 400 g chilled pasta ready meal lists: penne (32%), chopped tomatoes (28%), water, cream cheese (6%), onion, sunflower oil, salt, garlic, basil, sugar, black pepper. That reads as:

  • 128 g penne, 112 g tomatoes, 24 g cream cheese — those are given.
  • Water is above cream cheese, so it is somewhere between 24 g and 112 g. Sauce for pasta of that weight suggests the low end: call it 60–80 g.
  • Onion sits below cream cheese: under 24 g, so one small onion.
  • Everything after the oil is seasoning. In the EU, ingredients making up less than 2% of the finished product may be listed in any order at the end, so don’t over-read the sequence down there.

That is already a cookable recipe, and you got it from the side of a box.

A useful sanity check: the nutrition table gives salt per 100 g. Multiply by four for a 400 g meal and you have the total salt in grams. If that comes out at 4 g, the dish is seasoned at 1% — which is normal for chilled food and slightly above what most people cook at home.

Find the flavour spine

Every savoury dish has a spine made of the same seven things. Before you cook, write down where the original sits on each:

  • Salt — the one that decides whether it tastes “finished”.
  • Fat — carries aroma, coats the tongue, makes things taste rich.
  • Acid — lifts everything; its absence is why home versions taste heavy.
  • Sweetness — often present in savoury food and rarely noticed as sweetness.
  • Savouriness (umami) — tomato, cheese, anchovy, mushroom, yeast extract, soy.
  • Heat and spice — the aromatics you notice last.
  • Texture — thin or clinging, smooth or rough, crisp or soft.

The factory hits these with concentrates and powders because it must survive a lorry. You hit them with ingredients and heat, which is why a good home copy frequently tastes better than the original — this is worth understanding, and it is the whole of why ready meals taste the way they do.

Rebuild the technique the label never mentions

A label lists nouns. Cooking is verbs, and you have to infer them.

Look at the colour. Deep brown onions were cooked slowly, or the recipe used a caramel colouring — the ingredient list will tell you which. Grey-brown meat in sauce was probably not seared; if the original tasted roasted, sear yours.

Look at the sauce. A sauce that clings and looks glossy has either been reduced or thickened. If you see modified starch, xanthan or guar gum in the list, it was thickened — the factory cannot reduce a sauce for forty minutes on every line. You can. Reducing gives you concentration and thickness, which is strictly better, so do that instead of copying the starch.

Look at the vegetables. Bright, separate, still-firm pieces were blanched or added late. Soft and colour-matched means they cooked in the sauce.

Look for what is missing. No stock in the list but the dish tasted deeply savoury? That is what the yeast extract and the flavourings were doing. At home, use actual stock.

Cook it once, then change exactly one thing

The first attempt is a measurement, not a performance. Cook it, sit down, eat it properly, and write one sentence about what was wrong. Not five — one. “Needed more acid.” “Sauce too thin.” “Too sweet.”

Then change that one thing and cook it again. Changing three variables at once means the next version will be different but you will not know why, and you will never converge. This is the single most common reason people give up on a copy; there is a longer list of those in the mistakes guide.

Taste it at the temperature you will serve it, too. Salt and acid read very differently at 90 °C than at 60 °C, and a sauce that seems perfect in the pan can be flat on the plate.

Where the app fits

Copying a dish: the honest answers

Is it legal to copy a recipe?

Cooking anything you like is entirely legal, and a list of ingredients with functional instructions is generally not protected by copyright in the EU or the US. What is protected is somebody’s written expression — their headnote, their phrasing, their photographs. So copy the dish freely; write it up in your own words rather than republishing theirs.

How close can a home copy really get?

With a readable ingredient list, close enough that side-by-side you would struggle to call it. Without one — working from a photo of a plate — you are making an educated reconstruction, and the honest thing is to mark which parts were inferred rather than read.

Do I need to match the additives and E-numbers?

Almost never. Most of them are doing a job you do not have: keeping an emulsion stable for three weeks, stopping a sauce separating in a lorry, holding colour under a shop light. Reduce the sauce instead of thickening it with starch and you get concentration as well as body.

How long does the whole thing take?

Reading a label and drafting a recipe takes about ten minutes by hand, or roughly a minute with the app. The cooking takes as long as the dish takes. Expect two attempts before it is exactly what you wanted.

What if the packaging has no ingredient list?

Loose bakery items, deli counters and restaurant plates carry no list. Then you are working from the photo and the taste — start with the cuisine’s standard base, and be prepared to iterate more.
