How to read an ingredient list (and what it quietly tells you)

Order means weight. Percentages appear where the law forces them. Water is an ingredient. Here is how to read a European food label the way a cook reads a recipe.

The order is the recipe

Regulation (EU) 1169/2011 — the food information rules that apply across the EU, and which the UK kept — requires ingredients to be listed in descending order of weight, recorded at the time of their use in the manufacture of the food.

That last clause matters more than it looks. It is the weight going in, not the weight coming out. Rice that absorbs water, meat that loses it and onions that cook down to a third are all declared at their raw weight. So a list that opens with onion does not necessarily mean the finished dish is mostly onion — it means a lot of onion went in and then gave up its water.

Still, as a first pass: the first three ingredients are the dish, the middle is the supporting cast, and everything after the oil is seasoning.

The percentages you are given for free

QUID — Quantitative Ingredient Declaration — is the rule that forces a percentage onto the label whenever an ingredient is named in the product name, emphasised in words or pictures, or essential to what the food is. That is why a “Beef Lasagne” has a beef figure, and why a jar with tomatoes photographed on the front prints a tomato percentage.

These are the anchors for your arithmetic. Take the net weight, apply the percentages, and you have real gram values for the two or three ingredients that define the dish. Everything else you bracket by position. The worked example is in the method guide.

One caution: QUID figures are also weights at the point of manufacture. A “40% chicken” pie contains 40% raw chicken by weight of the recipe, not 40% of the pie you are holding.

Water is an ingredient, and it is telling you something

Added water must be declared like anything else, in its place in the weight order, whenever it makes up more than 5% of the finished product. Which means water frequently appears second or third on a sauce, and people find that alarming.

It should not be alarming, it should be informative. Water high in the list means the sauce was not reduced much — the manufacturer built it thin and then thickened it. That tells you two things: your version should probably use less liquid, and you should look for the thickener further down the list. When you reduce instead, you are removing exactly this water, which is why home copies frequently taste more concentrated than the original.

Brackets: the ingredient inside the ingredient

When a compound ingredient goes into a recipe, its own ingredients get listed in brackets after it. “Puff pastry (wheat flour, butter, water, salt)”. Read those brackets — they are where a surprising amount of the salt, sugar and fat in a product hides, and they explain flavours that seem to come from nowhere.

A stock cube declared as “vegetable bouillon (salt, yeast extract, sugar, flavourings)” is why the dish tasted savoury, and it is also why it tasted salty. If you replace it with real stock, you will need to put salt back in yourself — it did not stop being needed, it stopped being included.

The additive block, read as evidence

The tail of the list — the acidity regulators, thickeners, stabilisers, antioxidants, preservatives — is not a shopping list. It is a set of clues about what the product had to survive.

  • Modified starch, xanthan, guar, carrageenan → the sauce was thickened, not reduced. Reduce yours instead.
  • Emulsifiers (lecithins, mono- and diglycerides E471) → there is an emulsion here that wanted to split. Yours will want to split too; keep the heat down and add fat slowly.
  • Acidity regulators (citric acid E330, lactic acid E270) → pH mattered, for safety or for taste. Some of that acidity you do want to reproduce, with lemon or vinegar.
  • Preservatives, antioxidants (sorbates, ascorbic acid E300) → shelf life and colour. Irrelevant to you.
  • Yeast extract, hydrolysed protein, natural flavouring → savouriness bought in a bag instead of built with time. Use stock, browning and patience.

Every one of those exists for a reason, and the reason is almost always shelf life rather than taste — which is the whole of why ready meals taste the way they do.

“Natural flavouring”, and where the taste really is

“Flavouring” and “natural flavouring” are legitimate legal categories, and they are also where the label stops being useful, because the manufacturer is not required to break them down. If a dish tasted strongly of smoke, or of a herb that appears nowhere in the list, the flavouring is where it came from.

Do not try to buy the flavouring. Work out what it was imitating and use the real thing: smoked paprika, a properly browned base, a bay leaf, a strip of lemon zest, a splash of wine. This is one of the places where a home copy nearly always beats the original.

Allergens, and the fastest way to scan a label

The fourteen allergens listed in Annex II of the same regulation must be emphasised in the ingredient list — usually bold, sometimes capitals or italics. That makes them a genuinely useful shortcut: they leap out visually, so you can see at a glance whether a dish is built on wheat, milk, egg, soy, fish or nuts before reading a word.

If you are copying a dish to avoid one of them, the bold text also shows you exactly which structural jobs need replacing — and structural is the word, because milk in a sauce is not decoration.

Questions people ask

Label questions, answered plainly

Does the ingredient order include water?

Yes. Added water is declared in its place in the weight order whenever it exceeds 5% of the finished product. Water sitting second or third means a thin, thickened sauce rather than a reduced one.

Do the percentages on a label have to be exact?

They are the quantity used at the point of manufacture, and manufacturers work within a declared tolerance. Treat them as accurate to a percentage point or two — which is far more precision than you need to cook from.

What is modified starch, and do I need it?

Starch that has been physically or chemically treated so it thickens reliably and survives freezing, reheating and acidity. You do not need it: simmering the sauce down does the same job and concentrates the flavour while it works.

Can I just ignore all the E-numbers?

For the purpose of copying, almost always yes. Read them as evidence of what the product had to endure — long shelf life, transport, reheating — rather than as ingredients that create taste.

Why is sugar in a savoury sauce?

Usually to balance the acidity of tomatoes, to help browning, or to round off a bitter note. Reproduce it at half the amount first and taste — your ingredients are probably less acidic and less bitter than the industrial ones.
