Why ready meals taste the way they do
Factory food is engineered to survive a fortnight, a lorry and a microwave. That single constraint explains the salt, the sugar, the starch and the particular flatness — and it tells you exactly what to do differently.

Everything is designed backwards from the shelf
A chilled ready meal has to be safe and pleasant on day one and on day twelve. It will be built in one place, driven to another, kept at 3 °C, then blasted in a microwave by someone who will not stir it.
Every decision follows from that. Sauces must not separate when chilled and reheated. Vegetables must not go grey. Fats must not go rancid. Texture must survive a freeze or a chill cycle. Flavour must still register after pasteurisation. Almost nothing on the label is there because it tastes good; it is there because the dish has to still taste good after all of that.
Your version has to survive the walk from the hob to the table.
Salt is doing four jobs, and you only need one of them
In a chilled meal, salt seasons — and it also lowers water activity, which slows microbial growth; it firms proteins and controls water loss; and it suppresses bitter and metallic notes that appear during long heat treatment.
Which is why ready meals are seasoned at levels most people would not cook at: frequently 1.0–1.3% of the total weight, occasionally more. At home the preservation job disappears, the off-notes largely do not arise, and you can season for taste alone. That usually means less — but see mistake number two: less by decision, with the compensations made, not less by accident.
Sugar is rarely there to make it sweet
Sugar in savoury industrial food is doing balancing work. It offsets the acidity of tinned tomatoes, which are more acidic than fresh ones. It rounds off the bitterness that develops during long cooking and sterilisation. It assists browning where there is not enough time or heat for browning to happen properly. It also holds water, which affects texture.
Copy that sugar at full strength and your version will taste sweet, because your tomatoes are less acidic and your dish has not spent time in a retort developing bitterness. Start at half, and taste.
Starch and gums do the job that time would have done
Reducing a sauce takes time, energy and a pan that gets watched. A factory line producing thousands of trays an hour cannot do it, and a reduced sauce is also less stable through a chill-and-reheat cycle than a starch-thickened one.
So the sauce is built at the right final volume and thickened: modified starch for body that survives freezing and acidity, xanthan or guar for cling, carrageenan in dairy, emulsifiers to stop fat separating out.
The result is a sauce with the right texture and less of the concentrated flavour that reduction would have produced. This is the single biggest difference between an industrial sauce and a good home one, and it is entirely in your favour: take the lid off and simmer.
Flavourings replace the hours you actually have
Yeast extract, hydrolysed vegetable protein, natural flavourings, stock concentrates and roast-flavour compounds all exist to deliver, instantly and consistently, the savoury depth that would otherwise come from roasted bones, browned meat, long-sweated onions or fermentation.
They work — but they tend to arrive all at once and land in the same place on the palate, which is what people mean when they say industrial food tastes “flat” or “samey” even when it is well made. Depth built from several different sources over time arrives in layers instead.
You have the hours. Brown the meat properly, sweat the onions until they are genuinely soft, use real stock, add a parmesan rind, deglaze the pan. That is where the difference comes from.
Heat treatment quietly removes the top notes
Pasteurisation and, for ambient products, retort sterilisation involve holding food at high temperature long enough to make it safe. Volatile aromatics — fresh herbs, citrus, delicate spices — largely leave during that process, which is why they are usually added as flavourings afterwards, or simply not present.
That gives you a free move. Fresh herbs at the end, a squeeze of lemon off the heat, zest, a raw drizzle of good olive oil, a spoon of yoghurt. Almost every copy of a ready meal is improved by one fresh element that the original could not physically contain.
What all this means for your copy
Concretely, when you copy a chilled or ambient meal:
- Reduce instead of thickening. More flavour, better texture, no starch.
- Halve the sugar, then taste.
- Season to your own taste, knowing the original was seasoned for preservation too.
- Brown things properly, since that is where the flavourings were aiming.
- Use real stock where the label shows a bouillon or a hydrolysed protein.
- Add something fresh at the end that the original could never keep.

Questions people ask
About industrial food
Are the additives in ready meals bad for you?
At the levels permitted they are assessed as safe, and that is not really the interesting question for a cook. The useful question is what each one is doing — and the answer is nearly always shelf life, transport or reheating, none of which apply in your kitchen.
Why does my home version taste better than the original?
Because you can do things a production line cannot: reduce a sauce, brown properly, use real stock, and add fresh aromatics at the end that would not survive pasteurisation. Those are exactly the steps the additives were standing in for.
Why is there so much salt in ready meals?
Salt seasons, but it also lowers water activity, controls texture and water loss, and masks off-notes from long heat treatment. Three of those four jobs disappear the moment you cook at home.
Should I copy the sugar in a savoury sauce?
Start with half. It is usually balancing tinned-tomato acidity and long-cook bitterness, and your ingredients have less of both.
